Manage all aspects of food preparation and baking under the guidelines of HACCP & GMP's. Oversee and monitor the performance of production operations as it relates to quality, safety, productivity, sanitation, customer service and waste control.
' Interact with Employees, Supervisors and Managers on a daily basis to resolve technical problems, scheduling conflicts, equipment issues and employee concerns. The emphasis is to open communication networks, share ideas while working toward continuous improvement.
' Ensure that the training of hourly employees, as related to their specific job functions, is being performed (including Buddy System).
' Ensure that all standard operating procedures are adhered to at all times.
' Responsible for ensuring and enforcing a safe work environment for all employees.
' Properly guide employees to be efficient without sacrificing safety and quality.
' Ensure good manufacturing practices are followed.
' Plan and coordinate daily production by placing workers effectively, utilizing place sheets.
' Communicate necessary information to other departments to ensure efficient production.
' Ensure area and equipment is sanitized properly.
' Track daily attendance.
' Hold training meetings weekly for safety, GMPs and new procedures on equipment.
' Complete employee reviews when applicable.
' Complete daily production records (i.e. Ovens, Allergens, work orders)
' Responsible for turning all document into the proper departments
' Complete shift variance report and review/total short term interval forms.
' Instruct mixers on what product to mix 'product is mixed when the lines are ready for the product.
' Instruct line leaders what product is next for their line.
' Keep all lines producing in a timely and productive manner.
' Make sure product has correct ingredients, weights and manufactured correctly.
' Ensure the product comes out of the pan and into the freezer as soon as possible.
' Conduct hourly line checks and administer expectations.
' Attend all mandatory training as required
' Support and actively seek opportunities to drive the Continuous Improvement effort forward and communicate ideas to manager.
' Assist as needed in factory events/projects (inventory, meals, medical testing, etc.)
ORGANIZATIONAL RELATIONSHIPS
Immediate Supervisor (title): Area Coordinator
Subordinates (titles): 2-3 hourly line leads and 55+ hourly employees.
Other Job Titles Reporting to the Same Immediate Supervisor: 2 Bakery Supervisors (2nd & 3rd Shift)
ADDITIONAL INFORMATION/ COMMENTS -
' Good verbal and written communication skills necessary.
' Must be knowledgeable in GMP, HACCP, and sanitation and safety regulations.
' Ensure bakery operational and personal practices are in compliance with the FDA, USDA, State and Local regulatory agencies and OSHA.
' Ensure that Bakery operations exceed customer and 3rd party auditing criteria.
2-3 years of Supervisory or leadership experience in a food service environment.
Good verbal and written communication skills and attention to detail necessary.
4 year related College Degree a strong plus
Bi-lingual in English and Spanish strongly preferred.
